Adventures in the Pugliese Kitchen

Day 15:

Last full day of this absolutely incredible vacation. Today we venture even further south, to Gallipoli. Gallipoli is a coastal town in Apulia, southern Italy. The historic center, on an island off the mainland, shelters churches like St. Agatha’s Cathedral, with its ornate facade. Nearby, the Church of St. Mary of Purity has a maiolica tiled floor. Gallipoli Castle includes the Rivellino tower, standing apart from the main building. Across the bridge, on the mainland, is the Greek Fountain, dating from the Renaissance.

We meet for a day of cooking with Anna Maria.

We go to the market to select the ingredients for our class and then proceed straight to the kitchen for a hands-on cooking lesson. I’m in heaven. Here our new friend shares the secrets for preparing some of Puglia’s most beloved dishes.

We prepare a dessert with custard which is a traditional salento cake. This has to sit and chill before going into the oven.

We cut up zucchini and cherry tomatoes for our antipasto. The zucchini sautes in a pan of garlic and olive oil.

Natalie loves fresh zucchini.

The calamari and tomatoes for our appetizer.

We mix semolina flour and water together and roll our dough into a ball where it will rest

Once rested we roll and cut into orecchiette.

Dessert out of the oven.

Now that the meal is prepared it is time to enjoy the fruits of our labor.

Fresh pasta with cherry tomatoes and olive oil.

We sit together to enjoy our beautiful meal and some outstanding local wines to accompany our lunch. Buon Appetito!!!

Five Great Free Things to Do For Your Mom This Mothers Day

What do you get your mom on Mothers Day?  Do you order her flowers? Or grab that special card that says “thanks for all you do”?  Or maybe you Book a special spot for brunch?  These are all great ideas but what if:

For the new moms out there; you offer up to watch the little one for a few hours while she catches up on must needed rest.

For the moms with children grammar school age; offer to take them to the park while you have someone clean house or DO some laundry.

For the moms with junior high children; give mom her own spa day at home. Have someone help set up a station for a mani/pedi and get the kids involved.  Of course there will need to be some adult supervision but what a great way for mom to spend time with the kids while relaxing.

For the moms with high school teenagers; this can be tricky as the kids just want to spend time with their friends.  Have them make mom a special breakfast, lunch or dinner.  Have them create a menu for mom, set the table and treat her like she is at a fine dining restaurant.  (make sure someone is available for the clean up too!)

For the moms with adult children; moms just want to spend QUALITY TIME and we know that once you are out of the nest on your own things go in all directions.  If there are multiple siblings and you can not all get together, pick separate times to visit or call so she gets your undivided attention all day.

These are so simple and easy and really make mom happy because you have thought of something unique to make her day special.  Don’t get me wrong the flowers and cards and eating out are all extra bonuses but we just want to be acknowledged on one day for all we do for you.

Hummingbirds

I walked out my door this early am to walk my sweet dog scruffy and I heard the sound of a hummingbird off to my right. That strong vibrational hum that is music to my ears.  They are so beautiful and each one unique in size and color.

Their name comes from the fact that they create a humming sound when they fly. Hummingbirds can fly in any direction — forward, backward, up, down, side-to-side and even upside down — and they do so by flapping their wings at an incredible rate of between 60-200 times per second.  So as I turned to my right in the direction of the sound, this beautiful bird floated in front of my face, stopping mid air to make eye contact with me as if to say to me “good morning” so I said well good morning back to you.  It flew away in a flash and settled into a tree above me, resting.

Legends say that hummingbirds float free of time, carrying our hopes for love, joy and celebration. The hummingbird’s delicate grace reminds us that life is rich, beauty is everywhere, every personal connection has meaning and that laughter is life’s sweetest creation.  Today celebrate your life and every connection you have made past, present and future and remember to share and laugh along the way.  Life is precious.

Be Happy

I came across this company called 3☀️A that makes re-cycled shirts out of plastic bottles. I purchased my first shirt off an add on instagram and I loved it!.  It is so soft and washed well so I decided to go shopping this morning for a few more things.  They have the cutest shirts, logos, hats etc. and are reasonable.  I wanted to share part of their mission statement as it emanated with me because I too am a beach lover.

We ❤️  the beach.  It’s a lifestyle; an attitude. It’s that happy place we all dream of when we need to unwind, unplug and celebrate life.  Live the life you’ve imagined!

Speak to Yourself

I woke up wondering how will I feel today or what shall I write about and who am I talking to.  I asked God and the Universe to guide me in my day and show me what I need to know and who do I need to speak to; who do I need to serve.  Well the answer for me is first and foremost I am speaking to myself, as only then will I speak to others; if I believe in the words I am speaking. So going through some notes and positive affirmations this spoke to me this morning. @gabbybernstein

Step 4: Access Your Power in the Service of Others
I recently heard Marianne Williamson say in a lecture, “I’ll tell you how to find your power: Use your power for someone who has none.” She nailed it! There’s no greater way to tap into your power then to be in the service of someone who has none. If you’re feeling disempowered, immediately find a way to serve. Go to a homeless shelter, mentor a child — do anything that helps you discover your power and use it in service of someone else. This radical action will instantly remind you of how powerful you really are and reinforce the essential idea that your power is best used to lift up others and serve the world.

I often find myself helping others without even realizing I am doing it. When you truly listen to others speak, you can hear their inner voice asking for your guidance. I have found so many times that when a friend asks for guidance I have all the answers and advice and am able to help guide them on their path but so many times I miss listening to my own guidance. Be still and listen.

Lift up yourself, lift up others.
