National Wine Day

Today is National Wine Day!  A favorite for me, is it yours?  Put together a quick charcuterie platter and take out that special bottle tonight and cheer with your family, friends or neighbors.  So whether you enjoy a sparkling white wine, a rose, or a bold Cabernet Sauvignon, lift up your glass and cheer to the start of this Memorial Weekend.

This is simply apples, rainier cherries, Marcona almonds (Trader Joes rosemary are a favorite), port salut cheese, (which has a little tang but the consistency of a thicker brie), grapes and Simple Mills almond crackers (for those wanting gluten free, whole30 approved) and they are really good.  Add some meats like salami, chorizo, prosciutto to this dish and you have an easy appetizer ready to pair with a great wine. CHEERS!!

Antipasti in a jar

Such a simple recipe, yet it looks inviting and easy to prepare. It keeps in the refrigerator for unexpected company; to take to a dinner party as a hostess gift; or to set out for appetizers at your next dinner party.

  • Mozzarella balls
  • extra virgin olive oil
  • kosher salt
  • dried oregano
  • crushed red pepper flakes
  • grape tomatoes, halved
  • chopped fresh basil
  • pitted green olives

Toss the mozzarella balls with the olive oil ( I used avocado oil to lighten up), salt, oregano and red pepper flakes.  In a separate bowl toss tomatoes with salt and basil.  Allow to sit for 5 minutes to meld flavors together.

20180523_105013433749965467100920.jpgI placed one leaf of fresh basil at the bottom of the jars, then added the mozzarella balls evenly between two 10 oz glass jars.  Spoon the tomatoes over the cheese and then add the olives.  I used pitted castlevetrano olives. I also topped each with a slice of dehydrated roma tomato and a drizzle of balsamic vinegar.  These will sit in the refrigerator until ready to serve; up to 3 days.  Delicious and easy!

Five Ingredient Appetizer

Giada’s Italy – Recipe 3 – Avocado White Bean Dip

Today’s delicious and super easy appetizer is Avocado White Bean Dip. This appetizer with only 5 ingredients, is great for a last minute dish when unexpected company shows up or to take to someones home.

  • 1 can Cannellini beans drained and rinsed
  • 2 avocados, diced
  • 1 tsp kosher salt
  • 2 TBSP. lemon juice
  • 1/3 cup chopped fresh basil

Blend all together in a food processor; adding the basil to incorporate at the end.  SIMPLE AND EASY.DSC_0706

Serve with fresh cut vegetables, hot bread, crackers or pita chips.

Grilled Artichokes with Anchovy Mayo

Day 2 of ” Giadas Italy” cookbook.  Let me tell you these are DELICIOUS!! and so easy to make.  Trim up the artichokes, cutting off the sharp edges and slicing in half.  Scoop out the furry choke center.DSC_0686

Cook in white wine, rosemary, salt, water and fresh lemon juice until tender; around 10-15 minutes.  Drain on a rack.

Preheat bbq on medium to high heat.  Salt and olive oil the artichokes

Grill for 4 minutes on each side to sear.DSC_0691

Serve with anchovy mayonnaise. DSC_0695

I had already prepared WHOLE30 mayo and added anchovy paste, dijon mustard, olive oil, minced garlic and fresh mint. ENJOY 😉

Five Great Free Things to Do For Your Mom This Mothers Day

What do you get your mom on Mothers Day?  Do you order her flowers? Or grab that special card that says “thanks for all you do”?  Or maybe you Book a special spot for brunch?  These are all great ideas but what if:

For the new moms out there; you offer up to watch the little one for a few hours while she catches up on must needed rest.

For the moms with children grammar school age; offer to take them to the park while you have someone clean house or DO some laundry.

For the moms with junior high children; give mom her own spa day at home. Have someone help set up a station for a mani/pedi and get the kids involved.  Of course there will need to be some adult supervision but what a great way for mom to spend time with the kids while relaxing.

For the moms with high school teenagers; this can be tricky as the kids just want to spend time with their friends.  Have them make mom a special breakfast, lunch or dinner.  Have them create a menu for mom, set the table and treat her like she is at a fine dining restaurant.  (make sure someone is available for the clean up too!)

For the moms with adult children; moms just want to spend QUALITY TIME and we know that once you are out of the nest on your own things go in all directions.  If there are multiple siblings and you can not all get together, pick separate times to visit or call so she gets your undivided attention all day.

These are so simple and easy and really make mom happy because you have thought of something unique to make her day special.  Don’t get me wrong the flowers and cards and eating out are all extra bonuses but we just want to be acknowledged on one day for all we do for you.
